THE HISTORY
We have inherited a tract from the “Conte Nero of Bellagio”, that considers the origins of the culture of coffee in Italy in the 16th century when a famous merchant of Venice called Cesare Duni started to study coffee, out of curiosity about its healing properties.
And it is thanks to his passion for purchasing coffee and his friendship with a merchant of the Yemen
that he began his travelling to Africa and Center America.
SHORT HINTS ABOUT THE BLENDS
The Industrial Development has changed the coffee cropping and transport technologies. For that, some changes on the original blend, that we inherited from the tract, have been made.
The bases of the blends, commonly used, for the Arabic are: Santos, Costa Rica, Jamaica and India. And the bases for the Robusta are : Central Africa, Brazil and Indonesia.
90% of the roaster in Italy make the blends with different percentages of the bases; about our blends, the real distinction is the use of the bases from Uganda, although in small quantities, Arabica and Robusta, that other roasters don’t use.
The wise use of these bases makes a coffee with a groovy flavor, with an elegant density and a extraordinary stability.

SHORT HINTS ABOUT THE ORIGINS
In this case, the advanced technologies have changed coffee cropping. 50% of cropping is mechanized. This makes the coffee cropping system swifter but, in our opinion, deteriorates the quality and the result.
So we purchase the bases only with a traditional method cropping, this being more expensive than the mechanized coffee cropping, but, for our experience, guarantees quality, result and stability, also for the use of sieves 17/18 ( micrometry of each single grain of coffee).
The choices of the bases are of “ zero grade”( zero percent of flaws). The bases, with a humidity percent superior to 60%, are discarded.
The bases of Arabica are: Santos, Mugiana and Costa Rica Superior.
The bases of Robusta are: Uganda Superior, India Cherry AA, Vietnam Polish and Costa d’Avorio Top Selection.
The blend called “Gran Crema” expresses the coffee’ s sophistication and elegance. “Gran Crema” Nero C is a gentle blend with a compact aftertaste.
The blend “Gran Crema” is composed as follows:
- 70% Arabic ( 65% Santos and 5% Costa Rica);
- 30% Robusta ( 10% Uganda, 10% Cherry AA and il 10% Vietnam Polish).
Blend made with the “ slow roast” of 20 minutes. More expensive and more homogeneous but not invasive for gentle bases made all with sieves 17/18. The natural air cooling ( not water cooling) is more expensive because the weight loss is about 18%, additional guaranty about the quality of the final product.
The blend called “ Special +” has a singular, black and elegant character. It’s the pure expression of coffee’s huge and deep flavor.
The blend “Special +” is composed as follows:
- 50% Arabic ( 100% Santos);
- 50% Robusta ( 12,50 % di Uganda, 12,50% di Cherry AA, il 12,50% di Vietnam Polish ed il
12,50 di Costa D’Avorio)
Blend made with the “ slow roast” of 20 minutes. More expensive and more homogeneous but not invasive for gentle bases made all with sieves 17/18. The natural air cooling ( not water cooling) is more expensive because the weight loss is about 18%, additional guaranty about the quality of the final product.
“ Titanic” is a blend with a strong, bold and persistent flavor. A coffee with a broad and sought blend.
The blend “Titanic” is composed as follows:
- 50% Arabic (45% Santos and 5% Costa Rica)
- 50% Robusta (20% Uganda, 20% Cherry AA and 10% Vietnam Polish)
Blend made with the “ slow roast” of 20 minutes. More expensive and more homogeneous but not invasive for gentle bases made all with sieves 17/18. The natural air cooling ( not water cooling) is more expensive because the weight loss is about 18%, additional guaranty about the quality of the final product.
